Mad Dog BBQ Chicken Sandwiches
Ingredients:
1 bottle Mad Dog Original BBQ Sauce (Ultra Hot if you dare)
1 package of boneless chicken breasts
Bread or bulkie roll or onion roll recommended
Cheddar cheese
Slice each chicken breast in half to make two thin chicken patties from each breast.
Next, rub down the grill surface with paper towel dipped into olive oil if you want to be the one ripping apart the chicken and not your grill.
Now, when chicken is about 75% done and white on the outside, slather Mad Dog on the surface liberally and then flip immediately.
Slather sauce on the other side. Shut the lid. I will sometimes blast the heat at this point for a few minutes to add a bit of a char to the sauce. You must be careful though, as you could easily burn the chicken, so stay very close to the grill (a beer or two helps to focus on grilling). Add more sauce. Flip over. Repeat until the chicken is smothered in sauce and fully cooked.
Test the chicken before serving to others to make sure it’s cooked all the way through. Also you get to enjoy it by yourself for a minute before your kids or friends gobble it all up.
When chicken is done, move to top rack on grill (optionally add a slice or two of cheddar cheese).
Split open and butter the bulkie roll and put it on the top rack beside the chicken. When butter is melted, you can combine chicken and toasted buttery roll for something pretty much everyone loves to eat as an alternative to the same old burgers and hot dogs cookout fare.
Remember – if you have a BBQ sauce problem like me, it’s OK to dip the sandwich in BBQ sauce and it’s completely normal!
